3 c. all purpose flour
1/4 c. plus 2 tbsp. sugar
3/4 c. butter, softened
3/4 tsp. salt
Heat oven to 350 degrees. Grease jelly roll pan (15 1/2 x 10 1/2 x 1 inch). Beat flour, sugar, butter and salt in large bowl on medium speed until crumbly. Press firmly in pan. Bake until light golden brown, about 20 minutes. Prepare filling.
FILLING:
1 1/2 c. sugar
1 1/2 c. Karo light or dark corn syrup
3 tbsp. butter, melted
1 1/2 tsp. vanilla
2 1/2 c. chopped pecans
Mix all ingredients except pecans until well blended. Stir in pecans. Pour over baked layer and spread evenly. Bake until filling is set, about 25 minutes. Cool.
I made these this afternoon, they are fantastic. Of course I did change it a little bit, used brown sugar instead of white..but WOW! Screw the Pecan Tassies they're too much work, these are just as good. I made Kiffel dough too, going to bake them tomorrow; at least I plan to bake them tomorrow. I need a really really good buttery cut-out sugar type recipe, you have any?
ReplyDeleteI don't make sugar cookies. Too many years with Woody. She always wanted to make them and then I'd have to decorate them which was not enjoyable.
